Avocado Crab Salad

This is probably one of the easiest dishes I’ve come up with. It was simply perfect and there is little, if anything, I would change about it.

Every Saturday, my Costco has a little seafood stand they set out. There’s lobster, king crab legs, mussels, and scallops. The crab legs are pricey, almost $15 / lb so I always just ask for one leg. I know it sounds crazy and cheap but one leg, depending on how big it is, can range from $4-8 bucks! I got one that was less than $4 this time and it proved to be just the right amount.

  • 1 Haas avocado. Not over-ripened. Perhaps a bit under if you can gauge it right
  • 1/2 lime; juiced
  • 1 T butter; melted
  • 1 king crab leg
  • 1/4 white or red onion diced
  • Pinch of sea salt
  • Grind of fresh black pepper

Cut or break leg at middle joint so you have two equally sized pieces. Wet a sheet of paper towels and start rolling one of the legs lengthwise. Once you’ve reached about the midway point, put the other piece on and finish rolling. This way the legs don’t touch.  Put it in the microwave for about a minute to a minute and a half. In the last 20 seconds, put your butter (in a bowl) in the microwave so it can melt.

While things are heating up, dice up your avocado and onion. Toss with the lime juice and season with salt and pepper. Once the crab is done, carefully (it’s hot!), take the meat out and shred it with your fingers or roughly chop it with a knife. Put it in with the avocado and onions and pour the hot butter on top and mix everything. That’s right. I said pour hot melted butter on top.

Serves 1 or 2 as a side.
